Anyhow, this recipe has become one of my top 5 go-to recipes since starting to cook again. I can get around 10 servings for a total ingredient cost of $10, and that's even with shopping at Whole Foods and my natural foods co-op grocery.<br /><br />My only variations have been to use all pepper-jack cheese; the last time I used habanero jack from Whole Foods, which gives a good kick of heat. I added a small shredded carrot last time since the zucchini was on the small side, and also used sprouted-grain wraps, which seemed to hold their shape better and give added texture and flavor. I always seem to have some filling leftover, so I spread the extra filling over the rolled enchiladas, and then cover with he remaining sauce and cheese, so there are no problems with mushy vs. dry/crispy - it's a uniformly delicious product.
