Coconut Clusters
I am SO SO SO excited about this recipe! I have been testing it for weeks and let me tell you, these are going to be a game changer for me over Pesach. Gluten free ie: no matzah or matzah meals, refined sugar free, these coconut clusters are the PERFECT and HEALTHY snack for Pesach. Take them on the road, or use them as granola to top your yogurt, either way, these are a must add to your Pesach cooking list. I tweaked and tested this recipe until I got it just right and they are downright addictive! You're gonna love them! According to the CRC, 100% coconut is ok for Pesach even without special for Pesach certification, but ask your own local orthodox rabbi. If you live near a Trader Joes, they make coconut chips, and here in Israel you can get them in any health food store. Enjoy!
6 cups unsweetened coconut chips/flakes NOT shredded coconut
1 1/4 cup slivered almonds
1 cup coarsely chopped pecans
1 1/2 Tablespoons chia seeds
1 tsp cinnamon
1/2 tsp salt
2 Tablespoons coconut oil
1/2 cup honey or maple syrup
1 tsp vanilla extract
Preheat your oven to 325. In a large bowl mix the coconut chips, almonds, pecans, chia seeds, cinnamon and salt. In a microwave or in a small pot, melt the coconut oil and honey together. Mix in the vanilla. Pour the honey mixture over the coconut mixture and mix very well with a rubber spatula making sure you get all the chia seeds that fall to the bottom of the bowl and making sure everything is well coated. Spread the mixture out well onto a parchment lined baking sheet into as thin a layer as you can. Bake for 10 minutes. Remove from oven, mix the mixture and then spread it out again into one layer. Bake an additional 8-10 minutes until it is golden. Remove from oven and cool completely without touching it. Once it has cooled you can break it into pieces and enjoy! Store in a ziplock bag or container.
